BAC’s B.C. Chapter to host demo night with Chef Giacomo Chichi

On Oct. 30 at Vancouver Island University, Chef Giacomo Chichi, OraSi APAC Technical Director – Bakery Conselice, Emilia-Romagna, Italy, will demonstrate how to craft entremets, chocolate bonbons and chocolate garnishes, and discuss how the bakery streamlines production for fine pastries.

Giacomo grew up in one of the most fascinating spots of Italy, Sicily: a place full of history, uncontaminated ingredients and exceptional culinary tradition. With a Cordon Bleu Diploma in French Cuisine and Patisserie gained in London in his 20s, he joined a dynamic Michelin-starred team in the city for a few years before being offered the position of professor in one of the most prestigious culinary schools in Brescia – Italy.Mastering an encyclopedic knowledge of chocolate and fine cuisine, he moved to Singapore in 2018 as technical director for UNIGRA.

The Baking Association of Canada’s B.C. Chapter is presenting this event in partnership with Vancouver Island University and Martini Professional.
